Tempt My Tummy: Herb Chicken and Chopped Salad

It is again Tuesday and I’m posting this week’s installment of “Tempt My Tummy” hosted by Blessed with Grace. You might notice a pattern in some of my recipes. They are from a Rachael Ray cookbook called 365 No Repeats. It’s a thirty minute meals cookbook. I’m a fan. These recipes are not difficult to make. The biggest challenge is just having the ingredients. I make substitutions often and I list my changes in these recipes.
Pan-Roasted Garlic and Herb Chicken Breasts w/ Chopped Salad and Creamy Caper Dressing (another Rachael Ray!)
Ingredients:
4 garlic cloves (I replace w/ jarred chopped garlic)
1 C fresh flat-leaf parsley, chopped (I substitute w/ dried parsley)
1 tsp hot sauce (such as Tabasco sauce)
6 T extra-virgin olive oil (EVOO)
Salt & pepper
4 6-8 oz boneless, skinless chicken breast halves
4 T mayonnaise, pain yogurt or sour cream (I use the mayo)
3 T capers, drained, coarsely chopped
2 T red wine vinegar (sherry vinegar is fine)
3 T fresh dill, chopped (again, I use the dried stuff)
1 T Dijon mustard
1 pint yellow cherry or grape tomatoes, halved (I go w/ the grape tomatoes)
1 large head of radicchio, thinly sliced
6 scallions, thinly sliced (I leave these out)
1 seedless cucumber (I just use a regular old cucumber), sliced into bite-sized pieces
Crusty bread, sliced and toasted
Preheat oven to 400ºF
In a shallow dish, combine the garlic, parsley, hot sauce, 3 T of EVOO, salt, & pepper. Add the chicken breast and coat in the mixture; marinate for 5 minutes.
While the chicken is marinating, in a bowl combine the mayo w/ the capers, red wine vinegar, dill, mustard, and some pepper. In a slow, steady stream, whisk in the remaining 3 T of EVOO.
Preheat a large nonstick oven-safe skillet over medium-high heat. Add the chicken to the hot pan and brown on each side for 2-3 minutes. Transfer the skillet to the oven and roast chicken for about 15 minutes, or until it is cooked through (probably will take more than 15 minutes).
While chicken is roasting, in a salad bowl combine the grape tomatoes, radicchio, scallions, and cucumbers. Pour the creamy caper dressing over the chopped veggies and toss to combine.
Serve the chicken breast whole or sliced with some of the dressed chopped salad and the toasted bread.

Hi I was just wondering are there any new marykay releated posts, under a different heading, I havent read one in a while, so I’m not sure if there havent been any or I need to go to another section.
Hope you’re all doing well and keeping warm.
No. I haven’t written anything MK related in awhile. I’ve been sick and haven’t been able to work my business as much. I’ve missed work at my day job, too. No energy. I’m doing little activity so I have energy for my bride show next month. I have chronic fatgue syndrome and it has been flaring up since September.
I’m hoping to feel better soon. I have a lot to write, but I just haven’t been working much. Hopefully, I’ll be back soon!

I’m finally feeling better this week. I think my synthroid is finally kicking in. I hope to be back in business in January. I have a bride show early on and I have high expectations.

Sorry I wasnt able to reply to your message here, I havent logged on for over a week. How are you feeling? My husband has a syndrome which causes him to get fatigued, its an immunity disorder, and its tough, becuase he gets moody too.
The gloomy weather probably doesnt help much. I dont know which state you live in but majority are snowed in.
My husband has been making noises about my business again so I have to restratgise how to work it so he cannot complain, its not easy.
Anyways will check back again, and hope everyone has a vry merry Christmas, and stay warm and well everyone! Good luck for the new year and may we all be successfull.
Hi beepink! I have been feeling better these past few days. I think my Synthroid has taken effect. I’ve been on it just over a month now. It has helped with quite a bit of the fatigue. I still get drowsy during the day, but I am able to get up in the morning without feeling dizzy and that is a huge relief! My CFS makes me irritable at times. It’s not too bad, though. I think I just feel frustrated that my energy is gone and it comes out in my mood sometimes.
My business was pretty much closed while I was getting my health on track. I have LOTS coming up in January and I don’t want to lose steam. I hope I have rested enough to jump back into business!
I understand your dilemma. It is difficult maneuvering the time into your schedule so as not to step on somebody’s toes. I understand completely. You will figure it out. I know you will.
