Tempt My Tummy: Chicken in Mustard Sauce

Today’s edition of “Tempt My Tummy” is another one of my Rachael Ray favorites. Thank you, Blessed with Grace! I really enjoy participating in this each week!
Chicken No. 14,752-Chicken in Mustard Sauce (another Rachael Ray–can you tell I’m a fan yet?)
Ingredients:
4 6-oz boneless, skinless, chicken breast halves
1 T fresh thyme leaves, chopped (from 4 sprigs)–I use dried ![]()
Juice of 1 lemon (I just use bottled lemon juice–3/4 cup=one lemon)
Salt and pepper
2 T extra-virgin olive oil (EVOO)–twice around the pan
3/4 cup chicken stock or broth
3 super-heaping T good quality Dijon mustard (Grey Poupon)
3 super-heaping T sour cream
Season the chicken with the thyme, lemon juice, salt, & pepper. Heat a large nonstick skillet over medium-high heat w/ the EVOO. Add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until cooked through. Remove the chicken from the pan and cover w/ foil. Turn up the heat on the skillet to high and add the chicken broth and mustard, whisking to combine. Bring up to a boil, reduce the heat, and simmer for 3 minutes.
Whisk in the sour cream and continue to cook until slightly thickened, about 2 more minutes. Serve the sauce over the chicken and accompany with a simple salad and something to sop up the sauce, like couscous or bread.
